INGREDIENTS:
- • Lamb rack or lamb chops
- • Hot Boss hot sauce (use as per your preferred spiciness level)
- 250–300g raw prawns (peeled & deveined)
- • Chopped garlic, 2-3 cloves
- • Crushed mint leaves, 1 tablespoon
- • Ground ginger, 1 teaspoon
- • Turmeric, 1/2 teaspoon
- • Fresh rosemary sprigs
- • Salt and pepper to taste
- • Olive oil, 2-3 tablespoons
METHOD:
- 1. Prepare the Marinade:In a bowl, combine Hot Boss hot sauce, chopped garlic, crushed mint leaves, ground ginger, turmeric, and a generous pinch of salt and pepper.
- Adjust the amount of Hot Boss hot sauce according to your spice tolerance.
- 2. Marinate the Lamb:Place the lamb chops or lamb rack in a large dish or a resealable plastic bag.
- Rub the marinade mixture all over the lamb chops, ensuring they are evenly coated. Use your hands to massage the marinade into the meat.
- Lay fresh rosemary sprigs on top of the lamb chops.
- Cover the dish or seal the bag and let the lamb marinate in the refrigerator for at least 1 hour. You can leave it longer for more flavour, up to overnight.
- 3. Preheat the BBQ: Preheat your BBQ grill to medium-high heat. Make sure the grill grates are clean and lightly oiled to prevent sticking.
- 4. Grill the Lamb Chops:Remove the lamb chops from the marinade, shaking off any excess marinade.
- Drizzle or brush the lamb chops with olive oil on both sides.
- 5. Cooking:Place the lamb chops on the preheated BBQ grill. Cook for about 3-4 minutes per side for medium-rare,
- adjusting the time according to your preferred doneness and the thickness of the chops.
- Use a meat thermometer to check the internal temperature (should be around 145°F / 63°C for medium-rare, or adjust according to your preference).
- 6. Resting:Once cooked to your liking, remove the lamb chops from the grill and let them rest for a few minutes. This allows the juices to redistribute throughout the meat.
