INGREDIENTS:

  • 2-3 pounds pork belly
  • 2 teaspoons salt
  • 1 teaspoon onion powder
  • 1 tablespoon mustard seeds
  • 1 teaspoon ground ginger
  • Freshly ground black pepper (to taste)
  • Hot Boss Hot sauce (to taste)
  • 1/4 cup apple cider vinegar

METHOD:

  1. Prepare the BBQ:Get your BBQ ready and make sure it’s hot. You want a good, steady heat for slow cooking.
  2. Prepare the Pork Belly:
  3. Pat the pork belly dry with paper towels.Use a sharp utensil to stab the skin of the pork belly all over. This helps the skin to crisp up.Cut shallow grooves into the meat side of the pork belly in a crisscross pattern to create small cubes. This allows the marinade to penetrate more deeply.
  4. Make the Spice Mix:In a spice grinder or mortar and pestle, grind the mustard seeds until fine.Combine the ground mustard seeds, salt, onion powder, and ground ginger in a small bowl.
  5. Season the Pork Belly:
  6. Sprinkle the spice mix evenly over the meat side of the pork belly.Generously coat the meat side with Hot Boss Hot sauce.Massage the spices and sauce into the meat, making sure to get into the grooves.Place a few sprigs of fresh rosemary on top of the meat.Let the pork belly marinate for at least 30 minutes. For best results, cover and refrigerate for a few hours or overnight.
  7. Cook the Pork Belly:Place the marinated pork belly on the hot BBQ, meat side down. Slow cook it to ensure it cooks evenly and remains juicy.
  8. Mix your sauce: In a small bowl, combine soy sauce, Hot Boss sauce, sweet chilli/honey, and rice vinegar. Stir in the cornstarch mix. Set aside.
  9. Midway through the cooking process, carefully pour apple cider vinegar over the skin. You should hear it crackle as it reacts with the heat.
  10. Continue to cook until the pork belly is fully cooked and the skin is crispy. The total cooking time will vary based on the thickness of the pork belly and the heat of your BBQ, but it typically takes about 1.5 to 2 hours.
  11. Mix your sauce: In a small bowl, combine soy sauce, Hot Boss sauce, sweet chilli/honey, and rice vinegar. Stir in the cornstarch mix. Set aside.
  12. Finish and Serve:Once cooked, remove the pork belly from the BBQ and let it rest for a few minutes.
  13. Cut into desired pieces and serve immediately.
