INGREDIENTS:
- • 250g paneer (cubed)
- • 1 red onion (cubed)
- • 200g mushrooms (whole or halved if large)
- • 1/2 cup Hot Boss Original Sauce
- • 2 tablespoons olive oil
- • 1 tablespoon lemon juice
- • 2 cloves garlic (minced)
- • 1 teaspoon smoked paprika
- • Salt and pepper to taste
- • Skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning)
METHOD:
- 1. Prepare the Marinade:o In a large mixing bowl, combine the Hot Boss Original Sauce, olive oil, lemon juice, minced garlic, smoked paprika, salt, and pepper. Mix well.
- 2. Marinate the Paneer:o Add the paneer cubes to the marinade, ensuring they are well-coated.
- o Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for better flavour).
- 3. Prepare the Vegetables:o While the paneer is marinating, prepare the vegetables. Cube the bell pepper and red onion. Clean the mushrooms and halve them if they are large.
- 4. Assemble the Skewers:o Preheat the grill or barbecue to medium-high heat.
- o Thread the marinated paneer, bell pepper, red onion, and mushrooms onto the skewers, alternating between them.
- 5. Grill the Skewers:o Brush the grill grates with a little oil to prevent sticking.
- o Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the paneer is golden and the vegetables are tender. Brush with additional Hot Boss Original Sauce as they cook for extra flavour.
- 6. Serve:o Remove the skewers from the grill and serve hot. You can garnish with fresh herbs like cilantro or mint if desired.
