INGREDIENTS:
- • Any type of fish you prefer (e.g., king prawns, cod fillets)
- • Yam
- • Coriander
- • Spring Onions
- • Red Onion
- • Chopped Tomatoes
- • Fresh Tomatoes
- • Oil
- • Lime
- • Salt
- • Pepper• Hot Boss Hot Sauce & Smokey Hot Sauce
METHOD:
- Marinate the Fish:Rinse the fish and pat dry with paper towels.
- Season the fish with salt, pepper, and Hot Boss Hot Sauce. Squeeze lime juice over the marinade. Let it sit for 15-20 minutes.
- Prepare the Yam:Peel and chop the yam into small bite-size pieces.
- Place the chopped yam into a pan of cold water. Season with pepper and a dash of oil.
- Bring to a boil and cook until the yam is tender. Drain and set aside.
- Prepare the Ingredients:
- Chop the fresh tomatoes, red onion, spring onion, and coriander.
- Cook the Fish and Vegetables:In a frying pan, heat oil over medium heat.
- Add the chopped red onion and cook until softened.
- Add the marinated fish and cook until lightly browned on both sides.
- Pour in some more Hot Boss Hot Sauce.
- Add the chopped fresh tomatoes, canned chopped tomatoes, spring onion, and coriander.
- Season with salt and pepper to taste.
- Add a dash of Hot Boss Smokey Sauce.
- Combine and Cook:Once the fish is cooked through, add the boiled yam to the frying pan.
- Stir gently to combine all ingredients.
- Cover the pan and let it cook for 10-15 minutes until the fish is fully cooked and the flavours meld together.
- Serve:
- Serve the stew hot.
- Garnish with a squeeze of lime juice and fresh coriander.
