INGREDIENTS:

  • • Any type of fish you prefer (e.g., king prawns, cod fillets)
  • • Yam
  • • Coriander
  • • Spring Onions
  • • Red Onion
  • • Chopped Tomatoes
  • • Fresh Tomatoes
  • • Oil
  • • Lime
  • • Salt
  • • Pepper• Hot Boss Hot Sauce & Smokey Hot Sauce

METHOD:

  1. Marinate the Fish:Rinse the fish and pat dry with paper towels.
  2. Season the fish with salt, pepper, and Hot Boss Hot Sauce. Squeeze lime juice over the marinade. Let it sit for 15-20 minutes.
  3. Prepare the Yam:Peel and chop the yam into small bite-size pieces.
  4. Place the chopped yam into a pan of cold water. Season with pepper and a dash of oil.
  5. Bring to a boil and cook until the yam is tender. Drain and set aside.
  6. Prepare the Ingredients:
  7. Chop the fresh tomatoes, red onion, spring onion, and coriander.
  8. Cook the Fish and Vegetables:In a frying pan, heat oil over medium heat.
  9. Add the chopped red onion and cook until softened.
  10. Add the marinated fish and cook until lightly browned on both sides.
  11. Pour in some more Hot Boss Hot Sauce.
  12. Add the chopped fresh tomatoes, canned chopped tomatoes, spring onion, and coriander.
  13. Season with salt and pepper to taste.
  14. Add a dash of Hot Boss Smokey Sauce.
  15. Combine and Cook:Once the fish is cooked through, add the boiled yam to the frying pan.
  16. Stir gently to combine all ingredients.
  17. Cover the pan and let it cook for 10-15 minutes until the fish is fully cooked and the flavours meld together.
