Hot Boss Pasta Salad

Who said salads have to be boring? This Hot Boss Pasta Salad
is light, zesty, and totally loaded — perfect for BBQs, lunchboxes, or
quick dinners when you want something that hits both cool and spicy.
We’re tossing crisp lettuce, juicy tomatoes, sweetcorn, crunchy cucumber, and tender pasta in a simple, fiery Hot Boss dressing
that brings everything together with a bold, smoky kick. It’s got the
freshness of a salad, the comfort of pasta, and the attitude of a
full-on flavour bomb.
INGREDIENTS:
- 200g cooked pasta (fusilli, penne, or your fave)
- 1 cup cherry tomatoes, halved
- 1 small cucumber, diced
- 1 cup sweetcorn (canned or cooked from fresh)
- 2 handfuls lettuce (shredded romaine, baby gem, or mixed leaves)
- 2 tbsp red onion, finely chopped (optional)
- 1 cup of peppers
- 1 cup of mature cheddar cheese (or feta)
- Handful fresh herbs (parsley or coriander – optional)
- Dressing
- 2 tbsp Hot Boss Original Sauce
- 2 tbsp mayo or Greek yogurt (for creaminess)
- 1 tbsp olive oil
- 1 tsp lemon juice or vinegar
- Salt & pepper to taste
METHOD:
- 1. Cook the pasta:Boil, drain, and rinse under cold water. Set aside to cool.
- 2. Mix the dressing:In a bowl, whisk together Hot Boss Sauce, mayo/yogurt, olive oil, lemon juice, and a pinch of salt & pepper.
- 3. Build the salad:In a large bowl, combine cooked pasta, tomatoes, cucumber, sweetcorn, red onion peppers, cheese(if using), and lettuce.
- 4. Dress and toss:Pour over the dressing and toss until everything’s well coated. Garnish with herbs if you like.
- 5. Serve chilled or at room temp — on its own or as a banging BBQ side
